Those Vegan Cowboys are focused on creating milk proteins through precision fermentation without the need for animals, to make cheese and other dairy products that are identical in taste and texture to traditional dairy.
Their goal is to reduce the environmental impact of dairy farming and promote more ethical food production, while supporting traditional farmers in their transition to more sustainable practices.
